Description
This kale and Brussels sprouts salad will make you love kale. It’s full of sweetness, crunch and nut flavored Gruyere cheese.
Ingredients

Dressing
- 2 tablespoons grapefruit balsamic (I get mine from baker & olive)
- 3 tablespoons olive oil
- 1 tablespoon chopped shallots
- 1 tablespoon dijon mustard
- 1/2 teaspoon salt
- pinch of pepper
Salad
- 1 large bunch kale, washed and shredded
- 2 cups raw Brussels sprouts, shredded
- 1 cup shredded gruyere cheese, freshly grated
- 1 cup pistachios (or slivered almonds)
Instructions
- Add all dressing ingredients in a jar with a lid and shake. at least one hour before serving.
- Combine all salad ingredients in a bowl.
- Toss salad and dressing until evenly coated.
- Enjoy.
