I have been making these for years. They are so easy to make and your guests will go CRAZY for them. Choose any toppings! Veggies, grilled shrimp, shredded chicken, sausage and always cheese.

For this batch I did tomato, basil and mozzarella for half and the other half mozzarella and salami.

Description

For this batch I did tomato, basil and mozzarella for half and the other half mozzarella and salami.


Ingredients

  • Polenta (pre-cooked)
  • Basil Leaves (washed and dried)
  • One Roma Tomato Mozzarella (cut into one inch cubes)
  • Salam or Pepperoni (Thinly sliced)
  • Salt
  • Pepper
  • Olive Oil Spray


Instructions

Preheat oven to 400 degrees.

Lightly spray cookie sheet with olive oil.

Slice polenta into 1/4″ slices.

Place on cookie sheet.

Lightly spray polenta slices with olive oil and bake on top rack for 15 minutes.

Put toppings on choice on top of polenta slices. Top with salt and pepper and bake for an additional 10 – 15 minutes depending on the toppings.
