At some point very soon I am going to have to give potatoes their own category on this site. I make them several nights a week and love sharing all the different ways you can cook them. Crispy, mashed, smashed, as an egg cup crust.
So many options, but my absolute most favorite is this oven roasted potatoes recipe. There is something special that happens between the potato and the hot surface of a cast iron skillet. They cook to absolute perfection. Crispy on the outside and soft on the inside.
Cast Iron Skillet Care
I used to be intimidated by a cast iron skillet. What is this seasoning you speak of? Will it melt like the wicked witch of the east when water hits it? Why was everyone’s rusted when I was growing up?
Cast Iron Care is actually quite simple. No really, it is. You just need two basic things to care for your cast iron. Olive oil and kosher salt.
Cast Iron Don’ts: Don’t ever do the following. NOT EVER.
Use soap.
Put in the dishwasher.
Let the pan soak in water or let water soak in the pan.
Cast Iron Dos for Cleaning:
Place in the sink and pour ¼ cup kosher salt in the pan.
Using a wood spatula (or this scrubber) scrub away any food residue.
Rinse.
Dry completely.
Add ½ – ½ teaspoon of olive oil and using your hands make sure you coat the entire inside of the pan including sides and top rim.
Bonus: Don’t wipe the olive oil off your hands, rub it in like lotion. It’s an amazing moisturizer!
Oven Roasted Potato Recipe Pairings
No, not wine. Well, always wine. But I’m talking main dishes here. These potatoes can be cooked in the oven or on the grill.
When I cook these cast iron oven roasted potatoes on the grill, I love to cook them with ribs or easy weeknight chicken. They are great with grilled chicken sandwiches or ribeyes.
If I am using my oven, I cook them with yogurt parmesan chicken, the pan fried potatoes dipped in the yogurt parmesan sauce is simply incredible. Add rosemary and garlic (see Notes & Tips below) and serve them with oven roasted herbs and Dijon salmon.
Oven Roasted Potatoes Notes & Tips
- Make JJ’s favorite, pan fried potato and onions! Add a whole onion to the skillet. Cut into 1″ pieces and add from the beginning.
- Add fresh a teaspoon of fresh chopped rosemary for a savory flavor. Throw one to two chopped garlic cloves in for the last couple of minutes.
- Choose baby Yukon gold potatoes. Their texture and buttery flavor make perfect pan fried potatoes.

Ingredients
- 1 pound baby Yukon gold potatoes
- 2 tablespoon olive oil
- 1/2 teaspoon salt (add more to taste)
- 1/2 teaspoon pepper
Instructions

Preheat oven to 400°
- Rinse potatoes and slice in quarters lengthwise.
- Add potatoes, olive oil, salt and pepper to cast iron skillet.
- Roast in the oven for 20 – 25 minutes until desired brown on the outside. Toss halfway through to brown all sides.
Probably great but no measurements? A teaspoon of olive oil or half a cup? What kind if recipe is that?
